Crispy Yoghurt Aubergines

Instructions
  1. Preheat the oven to 50°C. In a shallow bowl or plate, add the yoghurt. In another shallow bowl or plate, sift the flour with the salt.
  2. In a frying pan on medium heat, heat the oil.
  3. Cut the aubergines into roughly 5-6mm rounds, then 2-3 at a time, dip into the yoghurt and coat both sides. Then dip into the flour and shake the plate a bit so flour coats the slice. Fry in the oil on medium heat until both sides are golden and crisp.
  4. Briefly drain on some kitchen roll, sprinkle with some more salt, then keep warm in the oven while you fry the remaining. You may need to top up the oil intermittently.
